A semi-dry sparkling-style cider with the base a blend of seven classic English and French cider apple varieties with a small added blend of our heritage apples. Aged for 12 months in oak barrels that prevously held Pinot Noir, this provides an additional character. it releases a delightful aroma of apple, great mouth feel with the tannins and delicate bubbles. Your choice as to whether you roll the bottle before you cap the crown seal to move the yeast through the beverage for a full cloudy experience, or gentle pour and retain in the bottom of the bottle.

Tasting notes

Gently pouring the liquid from the bottle, a beautiful colour of amber awaits you. A delightful aroma of apple rises along with delicate bubbles that form in the glass. These bubbles release in the mouth with a surprising effervescence. The natural tannins from the cider varieties provide a great balance and smooth the fruit acids that provide the backbone. There is length of fruit apple with a semi-dry finish on the tongue.

Don’t spoil your reward! Like all bottle conditioned ciders, the bubbles are due to a second fermentation in the bottle. Your cider will be cloudy, but this only adds to the taste.

Enjoy with other notorious Tasmanian produce, like locally-sourced blue cheese or free range meats (beef, lamb or venison).
